Fruit Cupcakes and Frosting Ingredients

Fruit Cupcakes

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup mixed fruits (such as strawberries, blueberries, peach, mango, etc.), diced

Frosting

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1-2 tablespoons milk or cream
  • 1 teaspoon vanilla extract
  • Additional fruits for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with cupcake liners.
  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  1. Beat in the eggs, one at a time, until well combined. Stir in the vanilla extract.
  1. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  1. Gently fold in the diced mixed fruits until evenly distributed throughout the batter.
  1. Spoon the fruit cupcake batter into the prepared cupcake liners, filling each about 2/3 full.
  1. Bake the fruit cupcakes in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  1. Allow the fruit cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  1. While the fruit cupcakes are cooling, prepare the frosting. In a mixing bowl, beat together the softened butter, powdered sugar, milk or cream, and vanilla extract until smooth and creamy.
  1. Once the fruit cupcakes are completely cool, frost them with the prepared frosting. You can decorate with additional fruit pieces if desired.
  1. Serve and enjoy your delicious fruit cupcakes!
